Milk Cake with Leftover Ghee Residue

We have a bi-weekly ghee day at home.  Not only is this day nice because we don’t have to think of what to make for lunch- it’s obviously going to be kadhi-chawal because of the buttermilk from all the churning- but I also get to eat delicious ghee residue. My mother usually ends up throwing it away when I’m not looking- so today I decided to make something out of it.

Recipe for Milk Cake with Ghee Residue:

Ingredients (serves 1-2)

50 ml milk

1/2 tablespoon cardamom powder

4 tablespoon Ghee Residue

4 tablespoon sugar

4 tablespoon semolina (sooji)

5-6 chopped almonds

Ghee for greasing your cup


  1. Take a small sauce pan and boil the milk with cardamom powder in high heat

  2. Reduce the heat of the flame to medium and add leftover ghee residue, sugar, sooji and fruits. Stir it till everything is mixed.

  3. Cook it for 10 minutes occasionally stirring it from time to time. You know it will be done once the mixture has come to gather and clumped up nicely.

  4. Take a small bowl or a pan and grease and press your mixture on it with a spoon. (I put it in a small glass bowl and ceased it with some ghee. Put you can put it on a cake tin also and cut it in squares after it is out of the fridge.)

  5. After it cools down, put it in the fridge for 10-15 minutes

  6. Garnish with almonds and gobble it up 🙂
