Dan Dan Noodles

I’ve made a lot of noodles in the six years. I’ve gone from buying instant packaged ones to make my own sauces, different types of ferments involved for them and to eventually making my own noodles. This has been by far my most favourite recipe.

The way you should probably cook this are through following these steps:

  1. Chilli Oil

  2. Noodle Sauce

  3. Chicken Topping

  4. Cook your noodles and leafy greens

  5. Assembling your bowl

Dan Dan noodles for two:

Chilli Oil:


2 tablespoons hot red pepper flakes

3 tablespoons gochugaru or red chilli powder

2 tablespoons finely minced ginger

3-6 cloves garlic, minced (I love garlic so I put however much I want to)

1 teaspoon salt

50 ml neutral oil/ or peanut oil if you have some


  1. Add all ingredients except for the oil and the peanuts into a stainless steel, (basically, anything that is heat proof- I used a steel katori).

  2. Heat the oil in a saucepan over medium-high heat for about  3 to 4 minutes. Turn off the heat.

  3. Now pour in the hot oil into the bowl filled with your spices. The oil will sizzle a lot but with time it’ll fizzle. Make sure you have the exhaust on in the kitchen, the air might get a little chilli.

  4. Wait for 30 minutes till it is in room temperature. You can store this in a jar and refrigerate for 1-2 weeks.

Noodle Sauce:


2 tablespoons crunchy peanut butter (room temperature)

4 tablespoons light soya sauce (I used Kikkoman Purple Label )

1 tablespoon vinegar

3-6 cloves garlic

1 tablespoon honey

1 green onion chopped (optional)


Whisk all the ingredients together in a bowl

Chicken Topping:


2 tablespoon chilli oil

1 onion sliced

200 grams minced chicken

1 teaspoon gochujang (or 1/2 teaspoon chilli powder)

1 teaspoon vinegar

1/2 teaspoon sugar

1 green onion chopped


Heat your nonstick skillet, add in the chilli oil and sliced onions. Fry the onions in the medium high heat and stir for 3 minutes till they are lightly browned.

Add the minced chicken, gochujang, vinegar, sugar and green onion.

  1. Cook till the chicken has turned lightly brown and transfer to a bowl.

Prepare the noodles

Cook your noodles according to instructions.

If you would like to you can quickly stir fry some bok choy or spinach with some chilli oil and salt. I have an abundance of lettuce growing the garden. I heated up 1 tablespoon of oil in a very hot skillet and added lettuce leaves. One pinch of salt and some optional chilli oil. The stir fry should be done in 3-4 minutes.



20 grams of roasted peanuts, crushed


Take your two noodle bowls:

  1. Add in your noddle sauce with some chilli oil.

  2. Add in the noodles.

  3. Add in spoonfuls of chicken and your greens, and roasted crushed peanuts.

  4. Mix and devour.
